Great Use of Freshly Grown Arugula

Green City Growers is harvesting a lot of Arugula lately! Here is a simple recipe for those looking to creatively transform their Arugula into a something delicious: Arugula Pesto! This goes great with pasta and fresh veggies, roasted potatoes, seasonal fish, or any other way you might use basil pesto.

Arugula Pesto Recipe

Ingredients

  • 2 cups of packed arugula leaves, stems removed
  • 1/2 cup of shelled walnuts
  • 1/2 cup Parmesan cheese
  • 1/2 cup olive oil of your choice
  • 1 garlic clove peeled and minced
  • 1/2 teaspoon salt

Method

Toast the nuts in a pan over medium heat until lightly brown, or heat in a microwave on high heat for a minute or two until you get that roasted flavor.

Combine the arugula, salt, walnuts, olive oil, Parmesan and garlic into a food processor.

Be sure to taste it and if you want more of a certain flavor, add more!

Yield : 1 Cup
